Strawberry Spinach Salad with Chicken

Topped with Pecans and a creamy poppy seed dressing

You Will Need:

  • 1 (9 oz) Package of fresh spinach leaves
  • 1 1/2 cups strawberries, sliced
  • 1/4 cup nonfat plain greek yougurt
  • 1 tablespoon lemon juice
  • 1 tablespoon light agave nectar (may use honey)
  • 1 tablespoon poppyseeds
  • 1 tablespoon canola oil
  • salt to taste
  • 2 tablespoons chopped pecans

1) Place the spinach leaves, strawberries, and diced chicken in a large serving bowl

2) In a seperate bowl, whisk together yogurt, lemon juice, agave nectar, poppy seeds, and canola oil to creat the dressing. Season with salt to taste

3) Drizzle dressing over the salad in the bowl and toss gently to fully dress. Top with chopped pecans and serve immediately
