These baked fries are sweet and taste perfect with this spicy dipping sauce

Sweet Potato Fries with Adobe Sauce

Servings: 6

  • 3 Sweet Potatoes
  • 2 Tbsp Olive Oil
  • Salt to Taste
  • 8 oz Fat-Free Sour Cream
  • 2 Tbsp Chipotle Chili’s in Adobe Sauce – chopped into small pieces
  • 2 Tbsp Lime Juice
  • 1/4 cup Fresh Cilantro – chopped
  1. Preheat oven to 350 degrees.
  2. Wash potatoes and cut into long slices.
  3. Place potatoes and olive oil in a large Ziploc bag. Shake to combine.
  4. Spread potatoes out onto a baking sheet sprinkle with salt.
  5. Bake for 40 minutes, flipping over half thru the baking.  Continue to cook until potatoes turn brown and crispy on the outside.
  6. While the potatoes are baking, prepare the dipping sauce.
  7. In a small bowl combing the sour cream, chipotle chilies, lime juice, cilantro and salt.  Mix well and chill until ready to use.
  8. Serve fries with dipping sauce.
